When you have 5 pounds of leftover pulled pork and only 2 people to eat it, it gets boring quickly.
The first night we put the pork on freshly made challah buns, which was nice, but too plain for me. I wanted something else on it, like kale or coleslaw but I didn’t really have the time or energy to run to the store. So the next day, I assembled the same sandwich but this time with the leftover hashbrowns from that morning. It was nothing mind blowing but it was better than a plain pulled pork in my opinion.
My favorite pulled pork sandwich so far is the second one I made, a grilled cheese with cheddar, avocado, and extra bbq sauce mixed in. It’s very simple so I don’t think a recipe is necessary. I microwaved the leftover pulled pork just until it was warm, added some bbq sauce, and added it to some bread with cheddar cheese on both slices and 1/2 avocado. Put it on the panini grill, and you’ve got an amazing grilled cheese in less than 5 minutes. If I were hungrier, I would’ve added some caramelized onions and an egg.
Even after all those sandwiches, we still had to put a container of it in the freezer. If anyone has any cool ideas for what to do with leftover pulled pork, I would love to hear them. 🙂
