Open-Face Ribeye Steak Sandwich with Caramelized Onions and Blue Cheese

Open faced sandwiches are fun snacks for me, especially mini ones. Yesterday, I decided to make a ribeye in my cast iron then sliced it up and put it on toasted French bread with caramelized onions.

I’ve never been a huge fan of blue cheese but I believe that you should give every food at least 5 chances before you decide you dislike it. Maybe more than 5 chances for things that require an acquired taste for appreciation, like smelly blue cheese. This is Cashel Blue, so it’s creamy and not as intense as most blue cheeses. Still not crazy about it but I think I’m only on try #4.

Blue cheese aside, this is a great snack for when you crave steak but aren’t hungry enough to eat the entire thing. Or when you need nourishment from weeping all day about the end of Grey’s season 11. 🙁
