This sandwich is great when you’re craving a grilled cheese but you also know you need to work in a daily serving of vegetables. It contains 3 types of cheeses, 2 vegetables, and I’m not sure how to classify mushrooms because I don’t want to call them fungi.
You’ll have to cook the onions first, then throw in the mushrooms after a couple minutes, and lastly the kale just so it’s soft enough to chew. I added a little bit of salt, pepper, rosemary, and garlic powder.
The cheeses I used were cheddar and a tomato-basil cheese that didn’t have a name on the package. You’ll heat up a pan with half a tablespoon of butter and throw some shredded cheese on there. I used a parmesan mix and it gives the sandwich a cheese “crust” on the outside. It’s optional but I really like it because there’s cheese on the inside and out! I put one type of cheese on each slice of bread and put the bread in the pan with the butter. Then, I layered on the vegetable mix and sprinkled a shredded parmesan/asiago/romano mix on top.
When the cheese starts melting, you can put together the two pieces and press them down. The reason I didn’t do this in the panini maker is because I think it would make the bread too crunchy and I wanted a slower cooking of the bread. Enjoy 🙂
