Today, I’m going to share with you my new favorite breakfast.
I made this for the first time the other day when I didn’t have anything in the fridge besides eggs and potatoes and I needed to satisfy my ketchup craving. I grated some potatoes, wrung them out in a dish towel, and fried them in a pan. Added a little cheese as a binder, and topped it off with an egg and it was just what my ketchup needed.
Take 2 is a little healthier with carrots, onion, kale, and avocado. It still tastes awesome, but it makes you feel less guilty while eating it. The directions below make one big serving, so plan accordingly if you want more.
First, I peeled 2 medium sized yellow potatoes and 1 carrot. I used my box grater to grate the potatoes and carrot and set them on a dish towel after I finished. Then, I chopped up a little bit of onion and put it with the potatoes and carrots.
This part is pretty important. Unless you want soggy potatoes, you want to roll up the towel and wring out as much water as you can. After that, you can also microwave the potatoes and carrots for a couple minutes on a plate with paper towels to pre-cook it and get more water out, but I forgot to do that the second time I made these, and I didn’t notice a difference.
Dump this into a bowl with some spices. The only mandatory spices are salt, pepper, and garlic powder. I added around a 1/2 tsp of the salt and garlic powder, and a little less of the pepper. I also added some dried parsley, but you can add whatever you’re in the mood for. I also chopped up a small handful of kale to add some more color to my meal.
Heat up a pan over medium heat with a tablespoon of oil and just a touch of butter. When the butter starts to sizzle, it’s time to add the potato mixture. Make sure it’s evenly distributed and leave it in the pan for a few minutes to let the bottom brown. Then, you can start flipping it so that all the sides are browned.
When it’s almost done, you can start cooking the eggs in the other pan however you like it. I usually just fry an egg, but I like it a little runny so I’ll crack an egg in a pan and let it sit for a couple minutes, then I’ll turn off the heat and put a lid on just until the whites are cooked. (You don’t want the avidin in the egg white to bind to your biotin and cause a rare biotin deficiency-thanks biochem.)
Finally, when the potatoes are done, turn off the heat and add some shredded cheese. S. I didn’t even have shredded cheese so I kinda just ripped up some cheddar cheese slices and threw them in here and it worked.
Oh and don’t forget the avocado! It was sooo great on this dish. If you think avocados and hash browns sound like a gross combination, then let me know because I don’t want to be friends with you.
